Sweet Mango Yogurt Popsicles

2 ripe mangoes, peeled and diced

1 cup plain Greek yogurt

1/2 cup coconut milk

1/4 cup honey or maple syrup (adjust to taste)

1 tablespoon lime juice

A pinch of sea salt

Optional: Fresh mint leaves for garnish

Instructions
 

Prepare the Mangoes: In a blender, add the diced mangoes and blend until smooth. If you prefer some texture, set aside a few chunks for later.

    Make the Yogurt Mixture: In a separate bowl, combine the Greek yogurt, coconut milk, honey or maple syrup, lime juice, and a pinch of sea salt. Stir well until smooth and creamy.

      Layer the Mixtures: Take your popsicle molds and pour a layer of the mango puree into the bottom (about 1/3 of the mold). If you reserved some mango chunks, add a few on top of the puree.

        Add Yogurt Layer: Gently spoon the yogurt mixture over the mango layer, filling the molds about halfway.

          Finish with Mango: Top off the molds with the remaining mango puree, filling them almost to the top, leaving a little space for expansion.

            Insert Popsicle Sticks: Carefully insert the popsicle sticks into the center of each mold.

              Freeze: Place the molds in the freezer and freeze for at least 4-6 hours or until completely solid.

                Serve: Once frozen, run warm water over the outside of the molds to help release the popsicles. Gently pull them out and serve immediately. Garnish with fresh mint leaves if desired.
