Sweet Honey Butter Cornbread

1 cup all-purpose flour

1 cup cornmeal

1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup buttermilk (or regular milk with 1 tbsp vinegar added)

2 large eggs

1/4 cup unsalted butter, melted

1/4 cup honey

1 teaspoon vanilla extract

Preheat the Oven: Preheat your oven to 400°F (200°C). Grease a 9-inch square baking dish or line it with parchment paper for easy removal.

    Combine Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, cornmeal, sugar, baking powder, and salt until well combined.

      Mix Wet Ingredients: In a separate bowl, beat the eggs and then add the buttermilk, melted butter, honey, and vanilla extract. Mix until fully combined.

        Combine The Mixtures: Pour the wet ingredients into the bowl with the dry ingredients. Stir gently until just combined; be careful not to overmix. The batter will be somewhat lumpy, which is okay.

          Bake the Cornbread: Pour the batter into the prepared baking dish, spreading it evenly. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean and the top is lightly golden.

            Prepare Honey Butter: While the cornbread is baking, prepare the honey butter. In a small bowl, combine 1/2 cup softened unsalted butter with 1/4 cup honey. Mix until smooth and creamy. You can also add a pinch of salt for extra flavor.
