Ingredients

1 cup Medjool dates, pitted

1 cup rolled oats

1 cup unsweetened shredded coconut, plus extra for topping

1/2 cup almond butter (or any nut or seed butter of choice)

1/4 cup honey or maple syrup

1 tsp vanilla extract

1/2 tsp sea salt

1/2 cup chopped nuts (e.g., almonds, walnuts or pecans)

1/4 cup chia seeds (optional for added nutrition)

A pinch of cinnamon (optional)

Instructions

Prepare the Ingredients: Start by pitting the Medjool dates if they aren't pre-pitted. Soak the dates in warm water for about 10 minutes to soften them if they're a bit dry.

Blend the Base: In a food processor, add the soaked dates, rolled oats, shredded coconut, almond butter, honey (or maple syrup), vanilla extract, and sea salt. Blend until the mixture is sticky and combined, scraping the sides as needed.

Add Extras: If you're using chopped nuts, chia seeds, or cinnamon, pulse them into the mixture until evenly distributed. The mixture should still be somewhat chunky but hold together from the sticky dates and nut butter.

Shape the Mixture: Line an 8x8 inch (20x20 cm) square pan with parchment paper. Transfer the mixture into the pan and press it down firmly to create an even layer. Use a spatula or your hands to achieve a flat surface.

Chill and Set: Sprinkle any extra shredded coconut on top for added texture and flavor. Refrigerate for at least 1-2 hours, or until set. This helps the squares hold their shape when cut.

Slice and Serve: Once set, remove the mixture from the pan using the edges of the parchment paper. Cut into squares or bars as desired.

Store: Keep the energy squares in an airtight container in the refrigerator for up to a week, or in the freezer for longer storage.
