Ingredients

1 cup unsweetened shredded coconut

1 cup almond flour

1/2 cup maple syrup (or honey)

1/4 cup coconut oil, melted

1/2 teaspoon vanilla extract

1/4 teaspoon sea salt

1 cup dark chocolate chips (dairy-free if desired)

Extra shredded coconut for coating

Instructions

Prepare the Coconut Mixture: In a medium mixing bowl, combine the unsweetened shredded coconut, almond flour, maple syrup, melted coconut oil, vanilla extract, and sea salt. Mix well until everything is fully incorporated.

Form the Bites: Using your hands, take a tablespoon of the mixture and roll it into a small ball. Place the shaped bites on a baking sheet lined with parchment paper. Repeat until you’ve used all the mixture.

Chill: Place the baking sheet in the refrigerator for about 30 minutes to allow the bites to firm up.

Melt the Chocolate: While the coconut bites chill, melt the dark chocolate chips. You can do this in a microwave in 30-second intervals, stirring in between, or using a double boiler on the stove.

Coat the Bites: Once the coconut bites are firm, remove them from the refrigerator. Dip each bite into the melted chocolate, allowing any excess to drip off. Then, roll them in extra shredded coconut for added texture and flavor.

Set the Chocolate: Place the coated bites back on the parchment-lined sheet and let them sit until the chocolate hardens. You can speed up the process by refrigerating them again for about 15 minutes.

Serve and Enjoy: Once the chocolate has fully set, your Sweet Chocolate Coconut Bites are ready to enjoy! Store any leftovers in an airtight container in the fridge for up to a week.
