Sweet Chili Salmon Lettuce Wraps

1 lb (450g) fresh salmon fillet, skin removed

1/4 cup sweet chili sauce

1 tablespoon soy sauce

1 teaspoon sesame oil

1 teaspoon minced garlic

1/2 teaspoon grated ginger

1 tablespoon lime juice

1 head of butter or romaine lettuce (for wraps)

1 small cucumber, julienned

1 carrot, julienned

1/4 cup chopped fresh cilantro

1/4 cup chopped green onions

Sesame seeds (for garnish)

Lime wedges (for serving)

Instructions
 

Prepare the Marinade: In a small bowl, whisk together the sweet chili sauce, soy sauce, sesame oil, minced garlic, ginger, and lime juice until well combined. This will be the marinade for the salmon.

    Marinate the Salmon: Place the salmon fillet in a shallow dish and pour the marinade over the top. Allow it to marinate at room temperature for about 15-20 minutes to absorb the flavors.

      Cook the Salmon: Preheat your grill or a non-stick frying pan over medium heat. If using a pan, add a bit of oil to prevent sticking. Once hot, place the marinated salmon skin-side down and cook for about 4-5 minutes on each side (or until cooked through and flaky), basting with the remaining marinade during cooking. Remove from heat and let it rest for a few minutes.

        Prepare the Lettuce Wraps: While the salmon is resting, carefully separate the lettuce leaves. These will act as your wraps, so choose the largest and most intact leaves.

          Assemble the Wraps: Flake the cooked salmon into bite-sized pieces and place them in the center of each lettuce leaf. Top with julienned cucumber, carrot, chopped cilantro, and green onions.
