Ingredients

1 lb chicken tenderloins

1 cup buttermilk

1 cup all-purpose flour

1/2 cup cornstarch

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

1/2 tsp salt

1/2 tsp black pepper

1/2 cup sweet chili sauce

1 tbsp soy sauce

1 tbsp rice vinegar

1 tbsp honey

2 tbsp vegetable oil (for frying)

Sesame seeds and chopped green onions (for garnish)

Instructions

Marinate the Chicken: In a medium bowl, combine the buttermilk and chicken tenderloins. Ensure the chicken is fully submerged. Cover and refrigerate for at least 30 minutes to tenderize and add flavor.

Prepare the Breading: In a separate bowl, mix together the flour, cornstarch, garlic powder, onion powder, paprika, salt, and black pepper. This will create your seasoned breading.

Bread the Chicken: Remove the chicken from the buttermilk and let the excess drip off. Dredge each piece of chicken in the flour mixture, ensuring it's fully coated. Place the breaded tenders on a plate and let them sit for about 10 minutes to set the coating.

Heat the Oil: In a large skillet over medium heat, add the vegetable oil. Once the oil is hot (about 350°F), carefully add the chicken tenders in batches, ensuring you do not overcrowd the pan.

Fry the Tenders: Cook the chicken tenders for about 6-8 minutes on each side or until they are golden brown and cooked through. Use an instant-read thermometer to check that the internal temperature reaches 165°F.

Make the Sweet Chili Sauce: In a small saucepan over medium heat, combine the sweet chili sauce, soy sauce, rice vinegar, and honey. Stir well and bring to a simmer. Allow it to cook for about 5 minutes until slightly thickened.

Coat the Chicken: Once the chicken tenders are cooked, remove them from the skillet and place them on a paper towel-lined plate to drain excess oil. In a large bowl, toss the hot chicken tenders with the sweet chili sauce until they are completely coated.

Serve: Transfer the coated chicken tenders to a serving platter. Garnish with sesame seeds and chopped green onions. Serve hot with extra sweet chili sauce on the side for dipping.
