1 cup fresh blueberries (or frozen, thawed and drained)

1/2 cup granulated sugar

1/2 cup brown sugar, packed

1 tablespoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup buttermilk

1/3 cup vegetable oil (or melted coconut oil)

2 large eggs

1 teaspoon vanilla extract

Zest of 1 lemon (optional, for a citrusy twist)

1/4 cup coarse sugar for topping (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease with cooking spray.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, brown sugar, baking powder, baking soda, and salt until well combined.

      Combine Wet Ingredients: In another bowl, beat together the buttermilk, vegetable oil, eggs, vanilla extract, and lemon zest (if using) until smooth.

        Combine Dry and Wet: Pour the wet mixture into the dry ingredients. Stir gently until just combined; be careful not to overmix. The batter should be lumpy, and that's okay!

          Fold in Blueberries: Gently fold in the fresh or thawed blueberries, ensuring they are evenly distributed but not crushed.

            Fill Muffin Tins: Use a spoon or ice cream scoop to fill each muffin cup about 3/4 full with batter. If desired, sprinkle coarse sugar on top of each muffin for added sweetness and a crunchy topping.

              Bake Muffins: Place the muffin tin in the preheated oven and bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean or with just a few moist crumbs.
