1/2 cup cream cheese, softened

1/4 cup brown sugar

1 teaspoon cinnamon

1/2 teaspoon vanilla extract

1/4 cup chopped nuts (walnuts or pecans, optional)

1/4 cup raisins or dried cranberries (optional)

1 tablespoon melted butter

Powdered sugar for dusting (optional)

Prepare the Filling: Start by peeling and core the apples, then chop them into small bite-sized pieces. In a medium bowl, combine the chopped apples, cream cheese, brown sugar, cinnamon, vanilla extract, and if using, the nuts and dried fruit. Mix until well combined and set aside.

    Assemble the Roll-Ups: Lay a tortilla on a clean surface. Spread about 1/4 of the apple mixture evenly across the center of the tortilla, leaving about an inch around the edges.

      Roll It Up: Carefully roll the tortilla tightly from the bottom up, tucking in the sides as you go. Make sure the filling stays inside and use a bit of water or cream cheese to seal the edge if necessary.

        Cook the Roll-Ups: In a skillet over medium heat, add the melted butter. Once hot, place the rolled tortillas seam-side down in the pan. Cook for about 2-3 minutes on each side until golden brown and crispy. Make sure to watch them closely to prevent burning.
