1 ½ cups rolled oats

1 cup all-purpose flour

½ cup brown sugar, packed

½ teaspoon baking powder

¼ teaspoon salt

½ cup unsalted butter, melted

1 teaspoon vanilla extract

¼ cup honey or maple syrup

For the Apple Filling:

2 medium apples, peeled, cored, and diced (about 2 cups)

1 tablespoon lemon juice

1 teaspoon cinnamon

2 tablespoons granulated sugar

1 tablespoon cornstarch

For the Crumble Topping:

¾ cup rolled oats

½ cup all-purpose flour

¼ cup brown sugar, packed

¼ cup chopped pecans or walnuts (optional)

½ teaspoon cinnamon

¼ cup cold unsalted butter, cubed

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving an overhang for easy removal later.

    Prepare the Base: In a large mixing bowl, combine the rolled oats, all-purpose flour, brown sugar, baking powder, and salt. Add the melted butter, vanilla extract, and honey (or maple syrup), and mix until fully combined. The mixture should be crumbly but hold together when pressed.

      Assemble the Base: Press two-thirds of the oat mixture firmly into the bottom of the prepared baking pan to form a solid base. Reserve the remaining one-third for the crumble topping.

        Make the Apple Filling: In a medium bowl, toss the diced apples with lemon juice, cinnamon, granulated sugar, and cornstarch until well coated. Evenly spread the apple mixture over the base layer in the pan.

          Prepare the Crumble Topping: In another bowl, mix together the remaining oat mixture, flour, brown sugar, chopped nuts (if using), and cinnamon. Add the cold, cubed butter and use a fork or your fingers to mix until crumbly. Sprinkle this topping evenly over the apple filling.
