Ingredients

2 cups rolled oats

1 ½ cups milk (dairy or plant-based)

2 medium apples, peeled and diced (about 2 cups)

1/4 cup maple syrup (or honey)

1/4 cup brown sugar (packed)

1/2 cup Greek yogurt (or a dairy-free alternative)

1/4 cup melted coconut oil (or unsalted butter)

1 teaspoon vanilla extract

1 tablespoon ground cinnamon

1/2 teaspoon nutmeg (optional)

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup chopped walnuts or pecans (optional)

A handful of raisins or dried cranberries (optional)

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Grease a 9x9-inch baking dish or line it with parchment paper for easy removal.

Prepare the Oats Mixture: In a large mixing bowl, combine the rolled oats, baking powder, ground cinnamon, nutmeg, and salt. Stir well to ensure everything is evenly distributed.

Mix Wet Ingredients: In a separate bowl, whisk together the milk, maple syrup, melted coconut oil, Greek yogurt, and vanilla extract until smooth.

Combine Ingredients: Pour the wet mixture into the dry oat mixture and stir until fully combined. Gently fold in the diced apples, nuts, and dried fruits if using.

Transfer to Baking Dish: Pour the mixture into the prepared baking dish and spread it evenly. Press it down gently to create an even layer.

Add Toppings: For extra sweetness and a rustic finish, sprinkle a bit of brown sugar and a sprinkle of cinnamon on top.

Bake: Place the dish in the preheated oven and bake for 30-35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

Cool and Serve: Allow the oat bake to cool for about 10 minutes before slicing. Serve warm, and enjoy with a drizzle of maple syrup or a dollop of yogurt on top.
