1 lb (450g) large shrimp, peeled and deveined

1 cup jasmine rice

1 ½ cups water or chicken broth

3 tablespoons honey

3 tablespoons soy sauce (low-sodium preferred)

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon sesame oil

1 tablespoon olive oil

1 cup snap peas, trimmed

1 red bell pepper, sliced

1 small bunch of green onions, chopped

2 tablespoons sesame seeds

Salt and pepper to taste

Fresh cilantro, for garnish (optional)

Instructions
 

Prepare the Rice: Rinse the jasmine rice under cold water until the water runs clear. In a medium pot, combine the rinsed rice and water (or chicken broth). Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes, or until the liquid is absorbed. Remove from heat and let it sit covered for 5 more minutes.

    Make the Sauce: In a small bowl, whisk together honey, soy sauce, minced garlic, and grated ginger. Set aside.

      Cook the Shrimp: In a large skillet over medium-high heat, add the sesame oil and olive oil. Once hot, add the shrimp and season with salt and pepper. Sauté for about 2-3 minutes on each side, or until shrimp turns pink and opaque.

        Add Vegetables: Add the snap peas and red bell pepper to the skillet with the shrimp. Stir-fry for an additional 2-3 minutes, until the vegetables are tender but still crisp.

          Combine: Pour the honey garlic sauce over the shrimp and vegetables in the skillet. Cook for an additional 1-2 minutes, allowing the sauce to thicken slightly and coat everything nicely.

            Assemble the Bowl: Fluff the jasmine rice with a fork, and divide it evenly among serving bowls. Top with the honey garlic shrimp and vegetable mixture.

              Garnish and Serve: Sprinkle sesame seeds and chopped green onions over the top. Add fresh cilantro if desired. Serve warm and enjoy the sweet and savory flavors!
