Ingredients
  

2 large eggs

2 slices of rustic bread (such as sourdough or whole grain)

1 tablespoon olive oil or unsalted butter

1 ripe avocado, mashed

1 medium tomato, sliced

1/4 teaspoon smoked paprika

Salt and black pepper to taste

Fresh herbs (such as chives or parsley) for garnish

Optional: red pepper flakes for an extra kick

Instructions
 

Prepare the Toast:

    Heat a skillet over medium heat and add the olive oil or butter. Once hot, add the slices of bread and toast them until golden brown on both sides, about 3-4 minutes per side. Remove and set aside.

      Cook the Eggs:

        In the same skillet, reduce the heat to low. Crack the eggs into the skillet and cook gently. Cover with a lid to help the tops cook without flipping them. Cook for about 3-4 minutes, or until the whites are set, and the yolk is still runny. Season with salt and black pepper.

          Assemble the Toast:
