12 oz (340g) spaghetti or pasta of choice

1 cup sun-dried tomatoes, chopped (packed in oil is preferable)

3 cups fresh spinach, roughly chopped

4 cloves garlic, minced

1/2 cup heavy cream

1/2 cup grated Parmesan cheese (plus extra for serving)

2 tablespoons olive oil

Salt and pepper to taste

A pinch of red pepper flakes (optional, for a kick)

Fresh basil leaves for garnish

Cook the Pasta: In a large pot of salted boiling water, cook the spaghetti according to package instructions until al dente. Drain and reserve 1 cup of pasta water.
