Summer Fruit Crumble

Filling:

2 cups fresh strawberries, hulled and halved

2 cups fresh blueberries

2 cups fresh raspberries

1/3 cup granulated sugar

1 tablespoon lemon juice

1 tablespoon cornstarch

1 teaspoon vanilla extract

Crumble Topping:

1 cup all-purpose flour

1 cup rolled oats

1/2 cup brown sugar, packed

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup cold unsalted butter, cubed

Optional:

Vanilla ice cream or whipped cream for serving

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Filling: In a large mixing bowl, combine the strawberries, blueberries, and raspberries. Add the granulated sugar, lemon juice, cornstarch, and vanilla extract. Gently toss the fruit mixture until well-coated. Transfer the mixture into a greased 9x13-inch baking dish.

      Make the Crumble Topping: In another bowl, mix the flour, rolled oats, brown sugar, cinnamon, and salt together. Add the cold cubed butter to the flour mixture. Using your fingers or a pastry cutter, blend the ingredients together until the mix resembles coarse crumbs.
