4 large bell peppers (red, yellow, or orange)

1 cup cooked quinoa or rice

1 cup fresh pineapple, diced

1/2 cup strawberries, hulled and sliced

1/2 cup blueberries

1/2 cup Greek yogurt (plain or vanilla)

1 tablespoon honey or maple syrup

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 cup chopped fresh mint or basil, for garnish

Optional: 1/4 cup granola for added texture and crunch

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Bell Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. If needed, trim the bottoms slightly so they stand upright. Place the peppers in a baking dish.

      Make the Filling: In a large bowl, combine the quinoa or rice, diced pineapple, sliced strawberries, and blueberries.
