Instructions

Prepare the Cabbage Leaves: Bring a large pot of water to a boil. Carefully peel the leaves off the cabbage head, trying to keep them intact. Once you have about 12-15 leaves, blanch them in boiling water for about 2-3 minutes until softened. Remove and drain on paper towels.

Make the Filling: In a large mixing bowl, combine the ground beef (or turkey), cooked rice, chopped onion, minced garlic, oregano, paprika, salt, pepper, and beaten egg. If using, fold in the shredded mozzarella cheese for an extra cheesy touch.

Stuff the Cabbage Leaves: Take one cabbage leaf and place about 2-3 tablespoons of the filling near the stem. Fold the sides over the filling, then roll it up tightly from the stem end to the top. Repeat with the remaining leaves and filling.

Prepare the Tomato Sauce: In a saucepan, heat the olive oil over medium heat. Add the rest of the tomato sauce and let it simmer for about 5 minutes. Season with salt and pepper to taste.

Cook the Stuffed Cabbage Rolls: Preheat the oven to 350°F (175°C). Spread a thin layer of the tomato sauce on the bottom of a baking dish. Arrange the stuffed cabbage rolls seam-side down in the dish. Pour additional tomato sauce evenly over the rolls.

Bake: Cover the baking dish with aluminum foil to retain moisture and bake in the preheated oven for 40-45 minutes. Remove the foil in the last 10 minutes for a slightly caramelized top.

Serve: Once cooked, let the rolls cool for a few minutes. Garnish with freshly chopped parsley before serving.
