2 ripe avocados

1 can (5 oz) of tuna, drained

1/4 cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon lemon juice

1/4 cup finely chopped red onion

1/4 cup chopped celery

1/2 teaspoon garlic powder

1/4 teaspoon black pepper

1/2 cup shredded cheddar cheese

1/4 cup diced tomatoes (optional)

Fresh parsley for garnish

Olive oil for drizzling

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

    Prepare the Avocados: Slice the avocados in half and remove the pit. Using a spoon, scoop out a little of the flesh to create a larger well for the stuffing. Reserve the scooped avocado in a bowl.

      Make the Tuna Filling: In the bowl with the scooped avocado, add the drained tuna, mayonnaise, Dijon mustard, lemon juice, red onion, celery, garlic powder, and black pepper. Mix until well combined.

        Stuff the Avocados: Spoon the tuna mixture generously into each avocado half. Place them on a baking sheet.

          Add Cheese and Bake: Top each stuffed avocado with shredded cheddar cheese. For an extra touch, sprinkle diced tomatoes on top if desired. Drizzle a little olive oil over the avocados for added flavor.

            Bake: Place the baking sheet in the oven and bake for 12-15 minutes, or until the cheese is melted and bubbly.

              Garnish and Serve: Once baked, remove from the oven and let cool for a minute. Garnish with fresh parsley before serving.
