For the Dough:

2 cups all-purpose flour

1/4 cup granulated sugar

1/2 tsp salt

1/2 cup unsalted butter, chilled and cubed

1/4 cup cold water

1 tsp vanilla extract

1 envelope active dry yeast (2 1/4 tsp)

1 large egg, beaten (for egg wash)

For the Strawberry Filling:

1 cup fresh strawberries, hulled and sliced

1/4 cup granulated sugar

1 tbsp cornstarch

1 tbsp lemon juice

1/2 tsp vanilla extract

For the Cream Cheese Glaze:

4 oz cream cheese, softened

1/2 cup powdered sugar

1 tbsp milk

1/2 tsp vanilla extract

Instructions
 

Prep the Dough:

    - In a large bowl, combine the flour, sugar, and salt. Add the cubed butter and mix with a pastry cutter or your fingertips until the mixture resembles coarse crumbs.

      - In a small bowl, dissolve the yeast in cold water. Stir in the vanilla extract.

        - Gradually add the yeast mixture to the flour mixture. Mix until just combined, forming a soft dough. Do not overwork!

          - Knead gently on a floured surface for about 2-3 minutes. Wrap in plastic wrap and refrigerate for at least 1 hour.

            Make the Strawberry Filling:

              - In a saucepan over medium heat, combine sliced strawberries, sugar, cornstarch, lemon juice, and vanilla extract. Cook for about 5-7 minutes until the strawberries soften and the mixture thickens. Let cool.

                Assemble the Danish:

                  - Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

                    - Roll out the chilled dough on a floured surface into a rectangle about 1/4 inch thick. Cut into 6 equal squares.

                      - Create a border by making diagonal cuts in each corner of the squares, about 1 inch long, without cutting all the way through.

                        - Place a tablespoon of the strawberry filling in the center of each square. Fold the corners towards the center, overlapping them slightly.

                          - Brush the tops with beaten egg for a golden finish.

                            Bake the Danish:

                              - Bake in the preheated oven for 20-25 minutes or until the pastries are golden brown. Remove and let cool for 10 minutes.

                                Prepare the Cream Cheese Glaze:

                                  - In a mixing bowl, beat the softened cream cheese until smooth. Gradually add powdered sugar, milk, and vanilla extract. Mix until creamy.

                                    - Drizzle the glaze over the cooled danishes.
