1 ripe mango, peeled and diced

1 tablespoon vegetable oil

2 cloves garlic, minced

1 small red chili, finely chopped (adjust for spice preference)

1 tablespoon soy sauce

2 tablespoons chili paste (e.g., sambal oelek)

1 tablespoon honey or maple syrup

Juice of 1 lime

2 green onions, chopped

Fresh cilantro for garnish

Sesame seeds for garnish

Soak the Noodles: Begin by soaking the rice noodles in hot water for about 15-20 minutes, or until they are soft. Drain and set aside.
