1 lb (450g) ground chicken

2 tbsp soy sauce

2 tbsp honey

1 tbsp rice vinegar

1 tbsp sesame oil

3 cloves garlic, minced

1 inch fresh ginger, grated

½ cup chopped green onions, white and green parts separated

1 cup shredded carrots

1 red bell pepper, finely diced

1 tbsp cornstarch (optional, for thickening)

Salt and pepper to taste

1 head of butter lettuce or iceberg lettuce, separated into individual leaves

Sesame seeds for garnish

Additional green onions for garnish

Instructions
 

In a large skillet, heat the sesame oil over medium heat. Add minced garlic and grated ginger, sautéing for about 30 seconds or until fragrant.

    Add the ground chicken to the skillet, breaking it up with a wooden spoon. Cook until browned and cooked through, approximately 5-7 minutes.

      In a small bowl, whisk together the soy sauce, honey, rice vinegar, and cornstarch (if using) until combined.

        Pour the sauce mixture over the cooked chicken in the skillet. Stir to coat the chicken evenly and cook for an additional 3-4 minutes, allowing the sauce to thicken slightly. If desired, season with salt and pepper to taste.

          Stir in the chopped green onions (white parts), shredded carrots, and diced red bell pepper, mixing until well incorporated and warmed through, about 2 minutes.

            To serve, take a lettuce leaf and spoon the sticky honey soy chicken mixture into the center. Garnish with sesame seeds and additional green onions (green parts).

              Repeat until all the mixture is used, and serve immediately for a fresh and crunchy experience!
