Sticky Honey Garlic Tofu Stir Fry

Ingredients
  

1 block (14 oz) firm or extra-firm tofu, pressed and cubed

2 tablespoons cornstarch

3 tablespoons vegetable oil (divided)

3 cloves garlic, minced

1-inch piece of ginger, minced

1 bell pepper (any color), sliced

1 cup broccoli florets

1 cup snap peas

3 green onions, chopped

1 tablespoon sesame seeds (optional, for garnish)

For the Honey Garlic Sauce:

1/4 cup honey

1/4 cup soy sauce (low-sodium recommended)

2 tablespoons rice vinegar

1 tablespoon hoisin sauce

1 teaspoon sriracha (adjust for spice preference)

1 teaspoon cornstarch mixed with 2 tablespoons water (slurry for thickening)

Instructions
 

Prepare the Tofu: Start by pressing the tofu to remove excess moisture. Wrap it in a clean kitchen towel, place a heavy object on top, and let it sit for about 15-20 minutes. After pressing, cut the tofu into 1-inch cubes.

    Coat the Tofu: In a bowl, toss the cubed tofu with 2 tablespoons of cornstarch until evenly coated. This will give the tofu a crispy texture.

      Fry the Tofu: Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Once hot, carefully add the coated tofu cubes in a single layer. Fry until golden brown and crispy, about 2-3 minutes per side. Remove the tofu from the skillet and set aside.

        Sauté the Aromatics: In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and ginger, sautéing for about 30 seconds until fragrant.

          Add the Vegetables: Toss in the sliced bell pepper, broccoli florets, and snap peas. Stir-fry for about 4-5 minutes, or until the vegetables are vibrant and tender-crisp.

            Prepare the Sauce: In a small bowl, whisk together all the ingredients for the honey garlic sauce (honey, soy sauce, rice vinegar, hoisin sauce, and sriracha). Then, add the cornstarch slurry to the sauce mixture.

              Combine Everything: Once the vegetables are cooked, return the crispy tofu to the skillet. Pour the honey garlic sauce over the tofu and vegetables. Stir well to combine and ensure everything is coated. Cook for another 2-3 minutes until the sauce thickens and becomes sticky.

                Finish and Serve: Finally, sprinkle chopped green onions and sesame seeds over the stir fry. Serve hot over cooked rice or quinoa, and enjoy!
