Sticky Balsamic Chicken Sausage Traybake

500g chicken sausages (preferably fresh and herby)

2 cups baby potatoes, halved

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 red onion, cut into wedges

3 cloves garlic, minced

¼ cup balsamic vinegar

2 tablespoons honey

2 tablespoons olive oil

1 tablespoon Dijon mustard

1 teaspoon dried thyme

Salt and pepper, to taste

Fresh basil or parsley, for garnish

Preheat the Oven: Preheat your oven to 200°C (400°F).

    Prepare the Sauce: In a small bowl, whisk together the balsamic vinegar, honey, olive oil, Dijon mustard, dried thyme, salt, and pepper until well combined. Set aside.

      Arrange the Veggies: In a large baking tray, add the halved baby potatoes, sliced bell peppers, and red onion wedges. Drizzle with a little olive oil, sprinkle with salt, and toss well to coat the vegetables evenly.

        Add the Sausages: Nestle the chicken sausages amongst the vegetables on the baking tray.

          Pour the Sauce: Drizzle the prepared balsamic mixture over the sausages and vegetables, making sure everything is evenly coated.

            Bake: Place the tray in the preheated oven and bake for 30-35 minutes, or until the sausages are browned and cooked through, and the potatoes are tender. Give it a gentle stir halfway through for even cooking.
