2 cups of cooked butternut squash (mashed)

1 cup of cooked quinoa

1/2 cup of breadcrumbs (plus extra for coating)

1/4 cup of grated Parmesan cheese

1/4 cup of finely chopped green onions

1/4 cup of fresh parsley (chopped)

1 clove of garlic (minced)

1 tsp of smoked paprika

1/2 tsp of ground cumin

Salt and pepper to taste

1 egg (lightly beaten)

Olive oil (for frying)

Instructions
 

Prepare the Squash: If not already done, peel, cube, and steam the butternut squash until tender. Mash it in a mixing bowl until smooth and let it cool slightly.

    Mix Ingredients: In the same bowl, combine the mashed squash, cooked quinoa, breadcrumbs, Parmesan cheese, green onions, parsley, minced garlic, smoked paprika, ground cumin, salt, and pepper. Mix well until all the ingredients are incorporated.

      Form the Croquettes: With your hands, take a handful of the mixture and shape it into small patties or croquettes, about the size of a golf ball. Once formed, roll them lightly in additional breadcrumbs to coat.

        Heat the Oil: In a skillet, heat a few tablespoons of olive oil over medium heat until shimmering.

          Fry the Croquettes: Gently place the coated croquettes in the skillet, making sure not to overcrowd the pan. Fry them for about 3-4 minutes on each side or until golden brown and crispy. Remove and place on a paper towel-lined plate to absorb excess oil.

            Serve: Serve the squash croquettes warm, garnished with a sprinkle of fresh parsley and alongside a dipping sauce of your choice, such as garlic aioli or yogurt dressing.
