Spinach Mozzarella Puff Pastry Bites

1 sheet of puff pastry (thawed)

2 cups fresh spinach, chopped

1 cup shredded mozzarella cheese

1/2 cup ricotta cheese

1 clove garlic, minced

1/4 teaspoon red pepper flakes (optional)

Salt and pepper to taste

1 egg (beaten for egg wash)

1 tablespoon olive oil

1 tablespoon grated Parmesan cheese

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Sauté the Spinach: In a medium skillet, heat olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the chopped spinach and cook until wilted, about 2-3 minutes. Season with salt, pepper, and red pepper flakes (if using). Remove from heat and allow to cool slightly.

      Make the Filling: In a mixing bowl, combine the sautéed spinach, shredded mozzarella, ricotta cheese, and grated Parmesan. Mix until well combined. Adjust seasoning to taste.

        Prepare the Puff Pastry: On a lightly floured surface, roll out the puff pastry sheet to smooth out any creases. Cut it into 3-inch squares or circles.

          Fill the Pastry: Place a tablespoon of the spinach and cheese filling in the center of each pastry square. Fold the corners of the pastry over the filling toward the center to create a bundle. Alternatively, you can place another pastry circle on top to create a pocket and press the edges with a fork to seal.

            Apply Egg Wash: Using a pastry brush, coat the top of each pastry with the beaten egg to give it a lovely golden color when baked.

              Bake: Arrange the filled pastry bites on the prepared baking sheet, leaving space between each. Bake in the preheated oven for 15-20 minutes, or until golden brown and puffed up.

                Serve: Remove from oven and let cool slightly. Garnish with fresh basil leaves if desired, and serve warm.
