Spinach and Feta Quesadillas

Ingredients
  

2 cups fresh spinach, chopped

1 cup feta cheese, crumbled

1 cup shredded mozzarella cheese

4 large flour tortillas

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon dried oregano

Salt and pepper to taste

Optional: Sour cream or Greek yogurt, for serving

Optional: Fresh lime wedges, for garnish

Instructions
 

Sauté the Veggies: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional 1 minute until fragrant.

    Add Spinach: Stir in the chopped spinach and cook until wilted, about 2-3 minutes. Season with salt, pepper, and dried oregano. Remove from heat and let the mixture cool slightly.

      Mix in Cheese: In a mixing bowl, combine the feta and mozzarella cheeses with the sautéed spinach and onion mixture. Stir well to combine all ingredients evenly.

        Assemble Quesadillas: Lay one tortilla flat on a clean surface. Spread a generous amount of the spinach and cheese filling on half of the tortilla, then fold it over to create a half-moon shape. Repeat with the remaining tortillas and filling.

          Cook the Quesadillas: Wipe out the skillet and return it to medium heat. Lightly grease it with a little more olive oil if needed. Carefully place the folded quesadilla in the skillet and cook for 3-4 minutes on each side, or until golden brown and crispy. Remove from the skillet and let cool briefly before cutting into wedges.
