6 large eggs

1 cup milk (whole or almond)

1 cup shredded cheese (cheddar or feta)

1 medium onion, finely diced

2 cloves garlic, minced

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon nutmeg (optional)

1 cup diced tomatoes (fresh or canned, drained)

1 tablespoon olive oil

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté the Vegetables: In a large skillet, heat olive oil over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

      Add Spinach: Gradually add the chopped spinach to the skillet. Cook until wilted, stirring frequently, about 2-3 minutes. Remove from heat and let it cool slightly.
