Ingredients

20 large jumbo pasta shells

2 cups ricotta cheese

1 cup shredded mozzarella cheese (plus extra for topping)

1/2 cup grated Parmesan cheese

2 cups fresh spinach, chopped (or 1 cup frozen spinach, thawed and drained)

1 egg, lightly beaten

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon red pepper flakes (optional, for a bit of heat)

Salt and pepper to taste

3 cups marinara sauce (store-bought or homemade)

Fresh basil leaves for garnish

Instructions

Preheat the Oven: Preheat your oven to 350°F (180°C).

Cook the Pasta: Bring a large pot of salted water to a boil. Add the jumbo pasta shells and cook according to package instructions until al dente. Drain and set aside in a large bowl, tossing gently with a drizzle of olive oil to prevent sticking.

Prepare the Filling: In a large mixing bowl, combine the ricotta cheese, 1 cup shredded mozzarella, Parmesan cheese, chopped spinach, beaten egg, garlic powder, onion powder, red pepper flakes (if using), and a pinch of salt and pepper. Mix until well combined.

Stuff the Shells: Using a teaspoon or pipe bag, carefully fill each cooked pasta shell with the spinach and cheese mixture. Place the stuffed shells upright in a large baking dish.

Add Marinara Sauce: Pour the marinara sauce evenly over the stuffed shells, ensuring all shells are covered. Sprinkle the remaining mozzarella cheese on top for a cheesy, bubbly finish.

Bake: Cover the baking dish with foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.

Serve: Once baked, remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves before serving.

Enjoy your creamy and flavorful Spinach and Cheese Stuffed Shells in Marinara!
