For the Shrimp:

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

4 cloves garlic, minced

1/4 cup honey

2 tablespoons soy sauce

1 tablespoon sriracha (adjust for spice level)

1 tablespoon rice vinegar

1 teaspoon ginger, minced

Salt and pepper to taste

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

For the Rice:

1 cup jasmine rice

2 cups water

1 tablespoon butter

Salt to taste

For Additional Toppings:

Steamed broccoli or snap peas

Avocado slices

Lime wedges

Instructions
 

Cook the Rice:

    Rinse the jasmine rice under cold water until the water runs clear. In a medium saucepan, bring 2 cups of water and 1 tablespoon of butter to a boil. Add the rinsed rice and a pinch of salt. Stir once, cover, and reduce heat to low. Simmer for about 15-18 minutes or until water is absorbed. Remove from heat and let it sit, covered, for an additional 5 minutes. Fluff with a fork before serving.

      Prepare the Shrimp Sauce:

        In a small bowl, whisk together the honey, soy sauce, sriracha, rice vinegar, minced ginger, garlic, and a pinch of salt and pepper. Set this aside.

          Cook the Shrimp:

            In a large skillet, heat the olive oil over medium-high heat. Once hot, add the shrimp and season with salt and pepper. Cook for about 2-3 minutes on one side until they start to turn pink.

              Add Sauce and Finish Cooking:

                Pour the prepared sauce into the skillet with the shrimp. Stir well to coat the shrimp and cook for another 2-3 minutes until the shrimp are cooked through and the sauce has thickened slightly. Be careful not to overcook the shrimp.

                  Assemble the Bowls:

                    Divide the fluffy jasmine rice into bowls. Top with the spicy honey garlic shrimp. Add steamed broccoli or snap peas and avocado slices for extra texture and flavor.

                      Garnish and Serve:

                        Sprinkle sliced green onions and sesame seeds over the top for garnish. Serve with lime wedges on the side for a fresh zing.
