1 cup shredded green cabbage

1 cup shredded carrots

1 red bell pepper, sliced

1 cup corn kernels (fresh or frozen)

1 can black beans, rinsed and drained

1 avocado, diced

1/2 cup fresh cilantro, chopped

1 jalapeño, finely chopped (adjust to taste)

2 tablespoons olive oil

2 tablespoons lime juice

1 tablespoon honey or agave syrup

1 teaspoon smoked paprika

1 teaspoon cumin

Salt and pepper to taste

8 small corn or flour tortillas

1/2 cup crumbled feta cheese (optional)

Hot sauce (for serving)

Instructions
 

Prepare the Veggie Mix: In a large mixing bowl, combine the shredded cabbage, carrots, red bell pepper, corn, and black beans. Toss them together gently.

    Make the Dressing: In a small bowl, whisk together the olive oil, lime juice, honey (or agave), smoked paprika, cumin, and season with salt and pepper.
