Spicy Chili Nachos

Ingredients
  

1 large bag of tortilla chips (12 oz)

1 lb ground beef (or ground turkey)

1 can (15 oz) kidney beans, drained and rinsed

1 can (10 oz) diced tomatoes with green chilies

1 packet (approximately 1 oz) taco seasoning

1 medium onion, diced

2 cloves garlic, minced

1 jalapeño pepper, finely chopped (adjust to taste)

1 cup shredded sharp cheddar cheese

1 cup shredded pepper jack cheese

1/2 cup sour cream

1/4 cup sliced black olives

1/4 cup fresh cilantro, chopped (for garnish)

Sliced green onions (for garnish)

Optional: Hot sauce for extra spice

Instructions
 

Prepare the Beef Mixture:

    - In a large skillet, heat a tablespoon of oil over medium-high heat. Add the diced onion and sauté for about 3-4 minutes until translucent.

      - Add the minced garlic and chopped jalapeño, cooking for another minute until fragrant.

        - Add the ground beef (or turkey) to the skillet, cooking until browned. Drain excess fat if needed.

          Add Seasoning and Beans:

            - Stir in the taco seasoning, diced tomatoes with green chilies, and the kidney beans. Let the mixture simmer for about 5-7 minutes until heated through and flavors meld.

              Layer the Nachos:

                - Preheat your oven to 350°F (175°C).

                  - On a large baking sheet or oven-safe platter, spread half of the tortilla chips in an even layer.

                    - Spoon half of the beef mixture over the chips, followed by a generous layer of both shredded cheeses.

                      Repeat the Layers:

                        - Repeat the layering process with the remaining chips, beef mixture, and the rest of the shredded cheese.

                          Bake:

                            - Place the nachos in the preheated oven and bake for about 10-15 minutes, or until the cheese is bubbly and melted.

                              Garnish and Serve:

                                - Remove the nachos from the oven and let cool for a minute. Top with sour cream, sliced black olives, chopped cilantro, and green onions.

                                  - Add hot sauce for an extra kick, if desired.
