Ingredients

For the Spicy Chicken:

1 lb boneless, skinless chicken thighs

2 tbsp olive oil

2 cloves garlic, minced

1 tsp smoked paprika

1 tsp ground cumin

1 tsp chili powder

½ tsp cayenne pepper (adjust to taste)

Salt and pepper to taste

Juice of 1 lime

For the Avocado Cream:

1 ripe avocado

½ cup Greek yogurt or sour cream

1 lime, juiced

1 clove garlic, minced

Salt and pepper to taste

For the Tacos:

8 small corn or flour tortillas

1 cup shredded lettuce

1 cup diced tomatoes

½ cup chopped fresh cilantro

½ cup crumbled queso fresco or feta cheese

Lime wedges for serving

Instructions

Marinate the Chicken:

    - In a medium bowl, combine olive oil, minced garlic, smoked paprika, ground cumin, chili powder, cayenne pepper, lime juice, salt, and pepper. Add the chicken thighs and coat them well. Let them marinate for at least 30 minutes (or up to 2 hours in the refrigerator for deeper flavor).

      Prepare the Avocado Cream:

        - In a blender or food processor, combine the ripe avocado, Greek yogurt (or sour cream), lime juice, minced garlic, and a pinch of salt and pepper. Blend until smooth and creamy. Taste and adjust seasoning if necessary. Set aside.

          Cook the Chicken:

            - Heat a skillet over medium-high heat. Once hot, add the marinated chicken thighs. Cook for about 5-7 minutes on each side, or until fully cooked and nicely browned. Remove from heat and let rest for a few minutes before slicing into thin strips.

              Warm the Tortillas:

                - While the chicken is resting, warm the tortillas. You can do this in a dry skillet over medium heat for about 30 seconds on each side or wrap them in foil and warm in a pre-heated oven at 350°F (175°C) for about 10 minutes.

                  Assemble the Tacos:

                    - On each tortilla, add a generous spoonful of the sliced spicy chicken, followed by shredded lettuce, diced tomatoes, chopped cilantro, and crumbled queso fresco. Top with a drizzle of the avocado cream.

                      Serve:

                        - Serve the tacos warm with lime wedges on the side for an extra zesty kick. Enjoy your Spicy Chicken Tacos with Avocado Cream!
