2 cans (15 oz each) black beans, rinsed and drained

1 can (14.5 oz) diced tomatoes with green chilies

1 medium onion, chopped

3 cloves garlic, minced

1 bell pepper (any color), diced

2 carrots, diced

1 celery stalk, diced

1 jalapeño, seeded and minced (adjust for heat preference)

4 cups vegetable broth

1 tsp ground cumin

1 tsp smoked paprika

1/2 tsp cayenne pepper (adjust for heat preference)

1 tsp salt (or to taste)

1/2 tsp black pepper

2 tbsp olive oil

Fresh cilantro, chopped (for garnish)

Avocado slices (for serving)

Lime wedges (for serving)

Instructions
 

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion, bell pepper, carrots, and celery. Sauté for about 5-7 minutes, until the vegetables are softened. Stir in the garlic and jalapeño and cook for an additional 1-2 minutes until fragrant.

    Add the Spices: Sprinkle the cumin, smoked paprika, cayenne pepper, salt, and black pepper into the pot. Stir to coat the vegetables with the spices and cook for another minute.

      Combine the Beans and Broth: Add the rinsed black beans, diced tomatoes with green chilies, and vegetable broth. Stir well to combine all the ingredients.

        Simmer the Soup: Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for 20-25 minutes, allowing the flavors to meld together.

          Blend (Optional): For a creamier texture, take an immersion blender to blend a portion of the soup directly in the pot. Alternatively, transfer 1-2 cups of the soup to a blender, blend until smooth, and return it to the pot.

            Taste and Adjust: Taste the soup and adjust the seasonings if necessary, adding more salt, pepper, or lime juice for brightness.
