Spicy Baked Chicken Lettuce Wraps

1 pound ground chicken

1 tablespoon olive oil

2 cloves garlic, minced

1 small onion, finely chopped

1 red bell pepper, finely chopped

1 carrot, grated

2 tablespoons soy sauce

1 tablespoon Sriracha (adjust for heat preference)

1 tablespoon hoisin sauce

1 teaspoon rice vinegar

1 teaspoon sesame oil

1 teaspoon ground ginger (or grated fresh ginger)

Salt and pepper to taste

1 head of butter lettuce (or iceberg lettuce)

Green onions, sliced (for garnish)

Sesame seeds (for garnish)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped onion, sautéing until the onion becomes translucent, about 3-4 minutes.

      Cook Chicken: Add the ground chicken to the skillet. Cook, breaking it apart with a spatula, for about 5-7 minutes or until browned and fully cooked.

        Add Vegetables: Stir in the red bell pepper and grated carrot. Cook for an additional 2-3 minutes until the peppers are slightly softened.

          Flavor It Up: In a small bowl, combine the soy sauce, Sriracha, hoisin sauce, rice vinegar, sesame oil, ground ginger, salt, and pepper. Pour this mixture over the chicken and vegetable mixture, stirring well to coat everything evenly. Cook for another minute to allow the flavors to meld together.

            Bake: Transfer the chicken mixture to a greased baking dish or a baking sheet lined with parchment paper. Spread it out evenly. Bake in the preheated oven for about 15-20 minutes, or until the mixture is sizzling and slightly caramelized on the edges.

              Prepare Lettuce Wraps: While the chicken is baking, carefully separate the lettuce leaves, washing and patting them dry.

                Assemble: Once the chicken mixture is done baking, remove it from the oven. Let it cool for a couple of minutes, then spoon a generous amount into the center of each lettuce leaf.
