4 medium-sized whole wheat tortillas

1 cup fresh spinach leaves

1 medium tomato, diced

1/2 cup shredded cheddar cheese

Prepare the egg mixture: In a mixing bowl, crack the eggs and whisk them together with a pinch of salt and pepper.

    Cook the eggs: Heat a non-stick skillet over medium heat and add a little oil or butter. Pour in the whisked eggs and scramble until just set but still creamy. Remove from heat and set aside.
