12 oz spaghetti

1 whole bulb of garlic

1/2 cup unsalted butter (1 stick)

1/4 cup extra virgin olive oil

1/2 teaspoon red pepper flakes (adjust to taste)

Salt, to taste

1/4 cup fresh parsley, chopped

1/2 cup grated Parmesan cheese

Zest of 1 lemon

Freshly ground black pepper, to taste

Roast the Garlic: Preheat your oven to 400°F (200°C). Slice the top off the bulb of garlic, drizzle with a splash of olive oil, wrap it in aluminum foil, and roast for about 30-35 minutes until soft and caramelized. Let it cool slightly before squeezing the cloves out into a bowl.

    Cook the Spaghetti: While the garlic is roasting, bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti and set aside.

      Make the Garlic Butter Sauce: In a large skillet over medium heat, melt the butter and olive oil together. Add in the roasted garlic, and mash it into the butter using a fork or a whisk until smooth. Stir in the red pepper flakes and salt. If the sauce appears too thick, gradually whisk in some reserved pasta water until you reach the desired consistency.

        Combine and Season: Add the drained spaghetti into the skillet with the garlic butter sauce. Toss well to coat each strand. If needed, add more reserved pasta water. Stir in the chopped parsley, lemon zest, and grated Parmesan cheese. Season with freshly ground black pepper and adjust salt to taste.
