Spaghetti Carbonara with Peas and Bacon

400g spaghetti

150g pancetta or bacon, diced

1 cup frozen peas (about 150g)

3 large eggs

1 cup grated pecorino cheese (plus extra for serving)

2 cloves garlic, minced

Freshly cracked black pepper, to taste

Salt, to taste

Olive oil, for cooking

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Spaghetti: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of the pasta water, then drain the spaghetti.

    Cook the Bacon: In a large skillet over medium heat, add a drizzle of olive oil. Once hot, add the diced pancetta or bacon. Cook until crisp and golden brown, about 5-7 minutes. Add the minced garlic and cook for an additional 30 seconds, stirring often to prevent burning.

      Add Peas: Stir in the frozen peas into the skillet with the bacon and garlic. Cook for about 3 minutes, until the peas are warmed through.

        Beat the Eggs: In a medium bowl, whisk together the eggs, grated pecorino cheese, and a generous amount of freshly cracked black pepper. The mixture should be smooth and creamy.

          Combine Pasta and Sauce: Add the cooked spaghetti to the skillet with bacon and peas, tossing to combine. Remove the skillet from heat and quickly pour in the egg and cheese mixture, tossing vigorously to create a creamy sauce. If the sauce is too thick, gradually add reserved pasta water, a little at a time, until you reach your desired consistency.

            Season: Taste and adjust seasoning with salt and extra black pepper as needed.

              Serve: Plate the pasta immediately, garnishing each serving with extra pecorino cheese and chopped parsley for a fresh touch. Enjoy your creamy, savory delight!
