400g spaghetti

150g pancetta, diced

2 large eggs

100g Pecorino Romano cheese, finely grated (plus extra for serving)

2 cloves garlic, minced

Freshly cracked black pepper, to taste

Sea salt, for pasta water

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: Fill a large pot with water, add a generous amount of sea salt, and bring to a boil. Add the spaghetti and cook according to package instructions until al dente, typically about 8-10 minutes. Reserve 1 cup of pasta water, then drain the spaghetti.

    Fry the Pancetta: While the spaghetti is cooking, heat a large skillet over medium heat. Add diced pancetta and cook until it turns golden brown and crispy, about 5-7 minutes. Stir occasionally to ensure even cooking. Once crispy, remove from heat and set aside.

      Prepare the Egg Mixture: In a medium bowl, whisk together the eggs, grated Pecorino Romano cheese, and a generous amount of freshly cracked black pepper until well combined. It should form a creamy mixture.

        Combine Pasta and Pancetta: Once the spaghetti is drained, add it immediately to the skillet with the crispy pancetta (if the skillet has cooled down, gently reheat it). Toss thoroughly so the spaghetti is well coated in the rendered fat.

          Create the Sauce: Off the heat, pour the egg and cheese mixture over the hot pasta, stirring quickly to create a creamy sauce. If the sauce is too thick, gradually add reserved pasta water a few tablespoons at a time until desired creaminess is achieved.
