1 lb ground chicken

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 red bell pepper, diced

1 can (15 oz) black beans, drained and rinsed

1 cup corn (fresh or frozen)

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Butter or romaine lettuce leaves (for wrapping)

Optional toppings: diced avocado, shredded cheese, salsa, sour cream

Instructions
 

Prepare the Chicken: Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté for 3-4 minutes until soft and translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

    Cook the Chicken: Add the ground chicken to the skillet. Cook, stirring occasionally, until the chicken is browned and cooked through, about 5-7 minutes.
