1 lb (450g) large shrimp, peeled and deveined

1 cup couscous

2 cups vegetable broth (or chicken broth)

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 red bell pepper, diced

1 teaspoon smoked paprika

½ teaspoon ground cumin

½ teaspoon red pepper flakes (adjust to taste)

½ teaspoon salt

¼ teaspoon black pepper

1 tablespoon lemon juice

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Cook the Couscous: In a medium saucepan, bring the vegetable broth to a boil. Stir in the couscous, cover, and remove from heat. Let it sit for about 5 minutes until the liquid is absorbed. Fluff with a fork and set aside.

    Prepare the Shrimp Mixture: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 2-3 minutes until softened. Stir in the garlic and red bell pepper, cooking for another 2-3 minutes until the pepper becomes tender.
