1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 cup shredded pepper jack cheese (or cheese of your choice)

1 small red onion, finely chopped

2 cloves garlic, minced

1 tsp smoked paprika

1/2 tsp ground cumin

1/4 tsp cayenne pepper (optional, for extra heat)

Salt and pepper to taste

4 large flour tortillas

2 tablespoons olive oil (or butter) for cooking

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Prepare the Filling: In a large mixing bowl, combine the black beans, corn, half of the cheese, red onion, garlic, smoked paprika, cumin, cayenne (if using), salt, and pepper. Mix until well combined and set aside.

    Assemble the Quesadillas: Lay one tortilla on a clean surface. On one half of the tortilla, spread a generous amount of the black bean mixture. Top with a sprinkle of the remaining cheese and then fold the other half of the tortilla over to cover the filling.

      Cook the Quesadillas: Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Carefully place the folded quesadilla in the skillet. Cook for about 3-4 minutes on one side until golden and crispy. Carefully flip and cook for another 3-4 minutes on the other side, adding more oil if necessary.

        Repeat: Remove the cooked quesadilla from the skillet and place it on a cutting board. Cover with foil to keep warm. Repeat the process with the remaining tortillas and filling.

          Serve: After cooking all the quesadillas, cut them into wedges. Garnish with fresh cilantro and serve warm with lime wedges on the side.
