20 large white or cremini mushrooms

6 slices of smoked bacon, diced

1 cup cream cheese, softened

1 cup shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1/4 cup green onions, finely chopped

1 teaspoon smoked paprika

1/2 teaspoon black pepper

1/4 teaspoon salt

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

    Prepare the Mushrooms: Clean the mushrooms with a damp cloth, remove the stems gently, and set the caps aside. Finely chop the stems and reserve them for the filling.

      Cook the Bacon: In a skillet over medium heat, cook the diced bacon until crispy, about 5-7 minutes. Remove the bacon and set it on paper towels to drain. Leave about 1 tablespoon of bacon drippings in the pan.

        Sauté the Mushroom Stems: In the same skillet, add the chopped mushroom stems and minced garlic. Sauté for 3-4 minutes until softened.

          Make the Filling: In a mixing bowl, combine the sautéed mushroom stems with cream cheese, shredded cheddar cheese, grated Parmesan cheese, crispy bacon, green onions, smoked paprika, black pepper, and salt. Mix until well combined.

            Stuff the Mushrooms: Using a small spoon or your hands, fill each mushroom cap with the cheese and bacon mixture, packing it generously.

              Bake: Place the stuffed mushrooms on the prepared baking sheet and drizzle them lightly with olive oil. Bake in the preheated oven for 20-25 minutes, until the mushrooms are tender and the tops are golden and bubbly.

                Garnish and Serve: Remove from the oven, garnish with fresh parsley, and serve warm.
