Smoked Salmon Carbonara

Ingredients
  

300g spaghetti or fettuccine

150g smoked salmon, sliced into strips

2 large egg yolks

200ml heavy cream

50g grated Parmesan cheese, plus extra for serving

1 clove garlic, minced

1 tablespoon olive oil

1 tablespoon capers, rinsed and drained

Salt and freshly cracked black pepper, to taste

Fresh dill or parsley, for garnish

Zest of 1 lemon

Instructions
 

Boil Pasta: In a large pot of salted boiling water, cook the spaghetti or fettuccine according to package instructions until al dente. Reserve about 1 cup of the pasta water, then drain the pasta and set aside.

    Prepare Sauce Base: In a bowl, whisk together the egg yolks, heavy cream, and Parmesan cheese until well combined. Set aside.

      Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.

        Combine Ingredients: Lower the heat and add the drained pasta to the skillet along with the smoked salmon and capers. Toss gently to combine and heat through, about 1-2 minutes.

          Create Creamy Sauce: Remove the skillet from the heat. Pour the egg and cream mixture over the pasta, quickly tossing everything together. The residual heat will cook the egg and create a creamy sauce. If the sauce is too thick, add a little reserved pasta water until the desired consistency is reached.

            Season and Serve: Add lemon zest, salt, and freshly cracked black pepper to taste. Toss again to combine. Serve immediately, garnished with additional Parmesan cheese and fresh herbs.
