Ingredients

1 lb Brussels sprouts, trimmed and halved

4 cloves garlic, minced

3 tablespoons olive oil

1 tablespoon balsamic vinegar

1 teaspoon red pepper flakes (optional)

Salt and pepper, to taste

2 tablespoons grated Parmesan cheese (optional)

Fresh parsley for garnish

Instructions

Prepare the Brussels Sprouts: Begin by bringing a large pot of salted water to a boil. Add the Brussels sprouts and cook for 8-10 minutes until they are tender but not falling apart. Drain and let them cool for a few minutes.

Smashed Technique: Preheat your oven to 400°F (200°C). Once the Brussels sprouts are cool enough to handle, place them on a baking sheet lined with parchment paper. Using a fork or the bottom of a glass, gently smash each sprout to flatten it slightly.

Garlic Oil Mixture: In a small bowl, whisk together the olive oil, minced garlic, balsamic vinegar, red pepper flakes (if using), salt, and pepper.

Coat the Sprouts: Brush the smashed Brussels sprouts generously with the garlic oil mixture, making sure to get some minced garlic on each sprout.

Roasting: Place the baking sheet in the preheated oven and roast for 20-25 minutes, or until the sprouts are golden brown and crispy on the edges. If you like them even crispier, flip them halfway through roasting.

Finishing Touches: Once out of the oven, sprinkle the grated Parmesan cheese over the hot Brussels sprouts, allowing it to melt slightly. Garnish with fresh parsley for an extra pop of flavor and color.

Serving: Serve warm as a side dish or a delightful appetizer. Enjoy the crispy, garlicky goodness!
