Smashed Berry Yogurt Tartlets

For the Tartlet Shells:

1 ½ cups all-purpose flour

½ cup powdered sugar

½ cup unsalted butter, cold and cubed

1 large egg yolk

2-3 tablespoons cold water

A pinch of salt

For the Smashed Berry Filling:

1 cup mixed berries (strawberries, blueberries, raspberries, blackberries)

2 tablespoons honey or maple syrup (adjust based on berry sweetness)

1 tablespoon lemon juice

1 teaspoon vanilla extract

For the Yogurt Cream:

1 cup Greek yogurt

2 tablespoons honey (or to taste)

1 teaspoon vanilla extract

Zest of 1 lemon

For Garnish (optional):

Fresh mint leaves

Additional whole berries

Prepare the Tartlet Shells:

    In a large mixing bowl, combine the flour, powdered sugar, and salt. Add the cold, cubed butter and work it into the flour mixture using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Stir in the egg yolk, followed by cold water, one tablespoon at a time, until the dough comes together. Form into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.

      Preheat the Oven:

        Preheat your oven to 350°F (175°C).

          Roll and Shape the Dough:

            On a floured surface, roll out the chilled dough to about 1/8 inch thick. Cut out circles that are slightly larger than your tartlet pans. Press the dough into the pans and prick the bottoms with a fork to prevent bubbling. Chill in the refrigerator for an additional 15 minutes.

              Bake the Tartlet Shells:

                Bake in the preheated oven for 15-20 minutes, or until golden brown. Remove from the oven and allow to cool completely in the pans before carefully removing them.

                  Prepare the Smashed Berry Filling:

                    In a mixing bowl, combine the mixed berries, honey (or maple syrup), lemon juice, and vanilla extract. Use a fork to gently smash the berries while mixing until they are well combined, but still have some texture.

                      Make the Yogurt Cream:

                        In another bowl, whisk together the Greek yogurt, honey, vanilla extract, and lemon zest until smooth and creamy. Adjust the sweetness to your liking.

                          Assemble the Tartlets:

                            Spoon a generous dollop of yogurt cream into each cooled tartlet shell. Top with the smashed berry mixture, evenly distributing it across the tartlets.

                              Garnish and Serve:

                                If desired, garnish with fresh mint leaves and additional whole berries for a pop of color. Serve immediately or refrigerate until serving.
