Slow Cooker White Bean and Turkey Chili

1 lb ground turkey

1 medium onion, diced

3 cloves garlic, minced

2 cans (15 oz each) white beans (cannellini or great northern), drained and rinsed

1 can (14.5 oz) diced tomatoes (with juice)

2 cups chicken broth

1 cup corn (frozen or canned)

1 green bell pepper, diced

2 tsp ground cumin

2 tsp chili powder

1 tsp smoked paprika

1/2 tsp cayenne pepper (adjust to taste)

Salt and pepper to taste

2 tbsp olive oil

Juice of 1 lime

Fresh cilantro, chopped (for garnish)

Sour cream or Greek yogurt (for serving)

Shredded cheese (for serving)

Instructions
 

Brown the Turkey: In a skillet over medium heat, add the olive oil. Once hot, add the ground turkey and cook until browned, breaking it up into smaller pieces as it cooks. This should take about 5-7 minutes. Transfer the browned turkey to the slow cooker.

    Sauté the Vegetables: In the same skillet, add the diced onion and bell pepper. Sauté for about 5 minutes until softened. Add the minced garlic and cook for an additional minute until fragrant. Transfer the mixture to the slow cooker.

      Combine Ingredients: In the slow cooker, add the rinsed white beans, diced tomatoes (with their juice), corn, chicken broth, ground cumin, chili powder, smoked paprika, cayenne pepper, salt, and pepper. Stir gently to combine all ingredients well.

        Cook: Cover the slow cooker and set it on low heat for 6-8 hours or high heat for 3-4 hours, until the flavors meld and the turkey is fully cooked.
