Slow Cooker Mac and Cheese with Bacon

8 oz elbow macaroni

4 cups sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

4 cups whole milk

2 cups chicken broth

4 oz cream cheese, cubed

6 slices bacon, cooked and crumbled

1 tsp garlic powder

1 tsp onion powder

½ tsp smoked paprika

Salt and pepper to taste

1 cup breadcrumbs (optional, for topping)

2 tbsp butter (optional, for breadcrumb topping)

Instructions
 

Prep the Ingredients: Start by cooking the bacon until it's crispy. Once done, crumble it into small pieces and set aside. Cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

    Combine the Base: In your slow cooker, add the cooked macaroni, whole milk, chicken broth, garlic powder, onion powder, smoked paprika, salt, and pepper. Stir well to combine all the ingredients.

      Add the Cheeses: Layer in the shredded sharp cheddar and mozzarella cheese, along with the cubed cream cheese. Stir until everything is well combined and ensure the cheese is evenly distributed throughout the mixture.

        Bacon Blitz: Mix in the crumbled bacon, reserving a small handful for garnish.

          Slow Cook: Cover your slow cooker with the lid and set it on low for 2 to 3 hours. Stir occasionally to ensure even cooking and to help the cheese melt evenly.

            Optional Breadcrumb Topping: If you prefer a crunchy topping, melt the butter in a small skillet, and add the breadcrumbs. Toast the breadcrumbs in the skillet until golden brown, then set aside.

              Finish Up: Once the mac and cheese has thickened and is bubbly, taste and adjust seasoning if needed. If using, sprinkle the toasted breadcrumbs over the top, along with the reserved bacon crumbles, right before serving.

                Serve: Scoop the mac and cheese into bowls and enjoy the creamy, cheesy goodness with a sprinkle of extra cheese on top if desired!
