Ingredients

1 lb (450g) fresh button or cremini mushrooms, cleaned and quartered

4 tablespoons unsalted butter

5 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 tablespoon soy sauce

1 tablespoon Worcestershire sauce

1 teaspoon salt

½ teaspoon black pepper

1 tablespoon fresh parsley, chopped (for garnish)

Optional: a pinch of red pepper flakes for heat

Instructions

Prep the Mushrooms: In a bowl, combine the cleaned and quartered mushrooms with salt, pepper, and dried thyme (if using).

Melt the Butter: In a small saucepan over low heat, melt the butter. Once melted, add the minced garlic and sauté for 1-2 minutes until fragrant but not browned. Remove from heat.

Combine Ingredients: Pour the melted garlic butter into the slow cooker over the mushrooms. Add the soy sauce, Worcestershire sauce, and fresh thyme (if you’re using it fresh).

Slow Cook: Toss the mushrooms gently to ensure they are well-coated. Cover the slow cooker with the lid and set it to low heat for 3-4 hours or high heat for 1.5-2 hours. Stir halfway through if possible.

Serve: Once cooked, taste and adjust seasoning with more salt or pepper if necessary. Sprinkle fresh parsley on top before serving. If you like a bit of heat, add a pinch of red pepper flakes.

Enjoy: Serve the garlic butter mushrooms warm as a side dish, on toast, or over pasta. They're versatile and sure to impress!
