2 lbs beef chuck roast, cut into chunks

4 large onions, thinly sliced

3 cloves garlic, minced

4 cups beef broth

1 cup dry red wine (optional)

2 tablespoons Worcestershire sauce

1 teaspoon dried thyme

2 bay leaves

Salt and pepper to taste

3 tablespoons olive oil

12 oz egg noodles

2 cups shredded Swiss cheese (or Gruyère)

Fresh parsley for garnish

Sear the Beef: In a large skillet, heat the olive oil over medium-high heat. Season the beef chunks with salt and pepper, then add them to the skillet. Sear the beef on all sides until browned (about 4-5 minutes per side). Remove from skillet and set aside.

    Caramelize the Onions: In the same skillet, add the sliced onions. Reduce the heat to medium and cook, stirring occasionally, until the onions are caramelized and golden brown (about 15-20 minutes). Add minced garlic for the last minute of cooking.

      Deglaze the Pan: If using red wine, pour it into the skillet, scraping the bottom to loosen any browned bits. Let it simmer for 2-3 minutes to reduce slightly.

        Combine Ingredients in Slow Cooker: In a slow cooker, place the beef chunks, caramelized onions, garlic, beef broth, Worcestershire sauce, dried thyme, and bay leaves. Stir to combine.

          Cook: Cover and cook on low for 7-8 hours or high for 4-5 hours, until the beef is tender.

            Cook Noodles: About 30 minutes before serving, cook the egg noodles according to package directions. Drain and set aside.
