Slow Cooker Fig Jam Chili

1 lb ground beef (or ground turkey for a lighter option)

1 medium onion, finely chopped

3 cloves garlic, minced

1 bell pepper (any color), diced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (14.5 oz) diced tomatoes (with juices)

1 cup prepared fig jam

2 tablespoons chili powder

1 tablespoon cumin

1 teaspoon smoked paprika

1 teaspoon oregano

1/2 teaspoon cinnamon

1/2 teaspoon salt

1/4 teaspoon black pepper

1-2 fresh jalapeños, diced (optional for heat)

1 cup vegetable broth

Fresh cilantro, for garnish

Sour cream and shredded cheese, for serving (optional)

Instructions
 

Brown the Meat: In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat and set aside.

    Sauté Veggies: In the same skillet, add the chopped onion and bell pepper. Sauté for about 5 minutes until softened, then add the minced garlic and cook for another minute until fragrant.

      Prepare the Slow Cooker: Transfer the cooked meat and sautéed vegetables to a slow cooker. Add the black beans, kidney beans, diced tomatoes, fig jam, chili powder, cumin, smoked paprika, oregano, cinnamon, salt, pepper, jalapeños (if using), and vegetable broth.

        Mix Well: Stir all the ingredients together until well combined.

          Cook: Cover and cook on low for 6-8 hours or high for 3-4 hours. Stir occasionally if possible, but it’s not necessary.

            Adjust Seasoning: Once cooked, taste and adjust seasoning as needed. If you prefer a sweeter chili, stir in an extra tablespoon of fig jam.

              Serve: Serve hot, garnished with fresh cilantro and optional toppings such as sour cream and shredded cheese.
