1.5 lbs boneless, skinless chicken breasts

4 cups fresh or frozen corn kernels

1 medium onion, diced

2 medium potatoes, diced

2 cups chicken broth

1 cup heavy cream

1 cup milk

3 garlic cloves, minced

1 teaspoon dried thyme

1 teaspoon smoked paprika

1 teaspoon salt (adjust to taste)

½ teaspoon black pepper

2 tablespoons olive oil

½ cup chopped green onions (for garnish)

½ cup crumbled bacon (optional, for garnish)

Fresh parsley (for garnish)

Instructions
 

Sauté the Aromatics: In a skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

    Layer the Ingredients in the Slow Cooker: In your slow cooker, place the sautéed onion and garlic mixture. Next, add the chicken breasts, corn kernels, diced potatoes, thyme, smoked paprika, salt, and black pepper. Pour in the chicken broth and stir gently to combine all ingredients.
